Why this name?:
Gabriel García Márquez was a Colombian novelist, Nobel Prize in Literature in 1982 and one of the great masters of world literature. He was the fundamental figure of the so-called Boom of Latin American literature, an editorial phenomenon that, in the 1960s, gave world projection to the last batch of storytellers from the continent.
About this varietal:
In Café Granja la Esperanza the seed was brought by a friend from Taiwan that works with a community in Kenya. Once the seeds arrive at Potosi Farm in 2017 they were taken to a germinator and two months later to the nursery where the physical characteristics were analyzed and verified. The first lot was taken to the field on July of 2017 in one of the highest areas in Potosi farm with less than a hectare . The first harvest was picked on May of 2020 and the first batches were process as fully washed in order to check and prove the essence of the variety in a cup.

| Description: | Fermentation: Cherries are fermented for 96 hours in anaerobic form. During this hours barrels are stored in temperature control warehouse regulatig the temperature at 18 to 19°C. Drying Method: Dehydration in mechanical dryers for 48 hours at a temperature of 40°C then the cherries are moved to a terrace with african beds for 20 days. We monitored the temperature every 6 hours, if it exceeds the terrace is closed with a movable roof. |
